Not-So Cheese Sauce
An almond cream with nacho flavorings, this sauce is great on potatoes, broccoli, and as a dip for chips.
Ingredients
- 1 cups (360 ml) water
- 1 lemon, peeled
- 1 cup (180 g) roasted red pepper [or canned pimientos], peeled, seeded
- ⅔ cup (85 g) almonds, unsalted
- 1 teaspoon onion powder
- ½ Tablespoon chili powder
- ¼ cup (30 g) nutritional yeast
- ½ teaspoon salt, optional
Directions
- Place all ingredients into the Vitamix container in the order listed and secure the lid.
- Run the Hot Soup Program or start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 7 minutes 30 seconds.
